Executive Chef Rob McDaniel recommends this fine, full-bodied red wine to accompany the Slow Braised Lamb Shank with fingerling potatoes, golden beets, cipollini onions, Brussels sprouts and braising liquid. This Chateaufeuf-du-Pape is featured for a limited time from our extensive wine list at $75 per bottle.

Tasting notes
An intense red color, very dark. A nose of black fruits, kirsch, lavender, roasted lamb, garigue. Full-bodied, very ripe palate with a nice texture and soft tannins.

The vineyard
This wine comes from the younger vines at Beaucastel, together with a leased vineyard of seven hectares (a little over 17 acres) that lies to the west of Beaucastel, on the commune of Orange. The vineyards are farmed by the Perrin family.

Grape varietals
70% Grenache, 15% Syrah, 15% Mourvedre.

Winemaking
Part of the harvest is vinified using the specific Beaucastel technique of heating the grapes. The rest is vinifed traditionally, after de-stemming.

Maturing
In casks for a year, then bottled after fining and light filtering.

Serving
59 degrees Farenheit (15 degrees Celsius) in large glasses. This wine will also go perfectly with a roasted lamb with thyme.
