When coming up with new cocktails, I often look back to the classics for inspiration. The daiquiri is a favorite of mine, especially since I’m on a bit of a rum kick this summer. It is comprised of white rum, lime juice and sugar, shaken hard and served up. It’s refreshing, crisp and has that perfect summer flavor you crave on a hot day. I like to change things up a bit by flavoring the sugar, by way of simple syrup. It’s an easy way to add depth and complexity to any cocktail. For this particular cocktail I use ginger, which is great with lime and gives the drink a nice ginger bite. As for the rum, I prefer to use Bayou Silver. Bayou is a craft distillery out of Louisiana that makes true rums, so good that they will change the way you look at imported varieties. They’re using fresh, local sugarcane and it really shows in the glass. In a cocktail like this daiquiri variation, it’s crucial for each ingredient to be fresh and good quality since there are only three ingredients in the drink. So start squeezing some limes and pour in the rum, summer is here!
2 oz Bayou Silver Rum
1 oz ginger simple syrup*
.5 oz fresh lime juice
Combine all ingredients in your favorite cocktail shaker with ample amounts of ice. Shake hard; I like to bruise these cocktails for a fun, icy crunch. Strain into a chilled glass.
*Ginger Simple Syrup Ingredients
1.5 cups of sugar
2 cups water
1.5 oz fresh peeled and chopped ginger
Add all ingredients to a small pot and bring to a boil. Immediately turn off and allow to sit for 30 mins before straining out the ginger pieces. Sometimes I cut the ginger into small spears so I can dry them out and have candied ginger as a fun garnish.
